Blogmas Day 12 // Festive Gingerbread Cookies

Hello everyone, I hope you're all having a fabulous day. I've actually had quite a productive one as i've been feeling quite stressed out recently about uni work, so now that the end of the term is fast approaching i'm feeling much better about my work now. 

I did a poll on my Twitter yesterday and saw that some people aren't keen on my Blogmas this year. This is the first time i'm doing this so it's definitely a learning curve but I have been so proud of the content which i've posted, my favourite one being my Christmas Market post which you can find here. But anyway, if you have any constructive feedback I would absolutely love to hear it as i'm always looking to improve.

So today I thought i'd do a little baking post, which I don't do that many of mainly because well, I end up eating everything...Gingerbread is one of my favourites and it always reminds me of Christmas for some reason, I think it's the smell of cinnamon and ginger!
 INGREDIENTS 

350g of Plain Flour (plus a little extra for when you have to roll the dough!)
1 tsp Bicarbonate of Soda
2 tsp Ground Ginger
1 tsp Ground Cinnamon
125g Butter
175g Light Soft Brown Sugar
1 egg
4 tspn Golden Syrup

 METHOD

1. 
Sift together the flour, bicarbonate of soda, ginger and cinnamon and pour into a food processor. Add the butter, which is better when it's soft, and blend until it looks like breadcrumbs. After that, mix in the sugar.

Gently beat the egg and the golden syrup together and add into the food processor, start mixing it up until the mixture blends together and goes into a big dough ball. Tip the dough out onto a floury surface and knead it until it's smooth. Wrap it in clingfilm and leave it in the fridge to chill for about 15 minutes or so.

Preheat the oven to 180C/350F/Gas 4 and line a baking tray or two with greaseproof paper.

Roll the dough out to a 0.5cm thickness and don't forget to sprinkle some plain flour down so it doesn't stick to the surface. Now, this bit is where you can get creative or if you're a tiny bit lazy like me just make plain gingerbread cookies. You can either roll them into little balls to create normal cookies, or use a shaped cutter.

Bake the cookies in the oven for about 13-15 minutes. When you take them out make sure to let them cool down properly, although nothing is better than a warm gingerbread cookie, mmmm. Once they are properly cooled you can add some decorations or just leave them plain like mine. 


So there you have it, my super simple and quick recipe for festive gingerbread cookies. I love how you can make these and you can get as creative as you like, personally I just love plain gingerbread cookies although you could add all sorts of decorations to these and make them look a bit more fancy.
